I agree with you in that when they boiled you response down, there is no telling what that company does. And I think they should have informed you about the 300 word limit before they asked you to write the testimonial in the first place.

Although as much as you would like to craft the customer testimonials to your liking, I agree that it's never a good idea to alter the customer's own words. It loses the authenticity. It may even make the testimonial look suspicious. I would go back to the customer for horrendous spelling or grammatical mistakes but no further than that.
